Wok Recipe- cook quickly-Hot
1 tab olive oil
1/2 cup cashew chopped
1/2 onion
2 tab mung bean sprouts
500g lean mince
1 cup baby english spinich
1 cup largely chopped shiitake mushrooms
1 cup chopped snow pea shoots
4 roma tomatoes
1/2 cup carrott shavings
1 cup fresh rice noodle
1 cup vegetable stock
Crack't Pepper
Heat Oil, add onion til light brown, add mung beans and stir til onion dark brown and beans roasted on outside, add mince- quick stiring til half brown, add cashew stiring for a futher 1 min-add stock and bring to simmer stirring!
Add chopped tomatoes and shaved carrott stir and cover for 3 minutes stir and cover for another 2 mins.
Add fresh rice noodle(pre heated) stir and put lid on for another 1min, remove lid, add mushrooms, English spinach and snow pea sprouts. Stir until grens are limp and serve on toasted spelt with Crack't Pepper!
